Mole Day Food Ideas: Celebrate October 23 With Actual Mole
By the Halietza family · Updated October 19, 2026 · 4 min read
Every October a chemistry teacher finds our site, and we love it. Mole Day celebrates Avogadro's number, 6.02 × 10²³, on October 23 from 6:02 in the morning to 6:02 in the evening. The classroom tradition is to eat something with mole in the name, and most years that means guacamole. Here is how to serve the real thing, the Oaxacan sauce, to a class, an office or a kitchen table without spending the day cooking.

First, the two moles
The chemistry mole is a unit: 6.02 × 10²³ of anything. The Mexican mole (say MOH-leh) is a family of thick sauces made from dried chiles, nuts, seeds and spices, and in Oaxaca there are seven of them. The words are unrelated, which is exactly why the joke works. If you want the background for the lesson, What is mole covers it in five minutes, and What does mole taste like answers the question every student will ask.
Food ideas that work for a crowd
- Mole tostada bar. Warm a pot of mole, set out tostadas, shredded rotisserie chicken, crumbled queso fresco, sliced onion and sesame seeds, and let everyone build their own. No plates to serve, no oven.
- Mole over chicken, the classic. Rotisserie chicken pieces warmed in a pan with a little broth, mole spooned over, rice on the side. The recipe is in Easy chicken mole.
- Enmoladas tray. Corn tortillas dipped in mole, filled with chicken or cheese, rolled and lined up in a foil pan. They travel well and reheat in minutes. Steps are in Mole enchiladas.
- Mole nachos. A sheet pan of thick tortilla chips with warm mole drizzled over, then cheese, onion and crema. Think of it as chilaquiles with mole that you can eat with your hands.
- Mole and chips as a dip. Thin the sauce with a little extra broth and serve it warm in a slow cooker on low with a bowl of chips. The easiest option for an office.
- A mole tasting. Make two moles, say Mole Negro and Mole Rojo, and serve a spoon of each over a bite of chicken or a tortilla chip. Have people guess which has chocolate in it. Most get it wrong, which is the fun part.
- Mole tamales. Store bought tamales, steamed, with warm mole spooned over. The tamal is the plate.
How much to make
One 8 oz pouch of our dehydrated mole whisked into 3 cups of warm chicken broth makes about 3 cups of sauce, enough for 3 to 4 full plates or 10 to 12 tostadas and tasting spoons. The table below is for a sauce that is tasted rather than eaten as a meal.
| Group | Mole | Broth | Enough for |
|---|---|---|---|
| A class of 25 to 30 | One 16 oz pouch, or two 8 oz | 6 cups | A tasting or a tostada bar |
| An office of 10 to 15 | One 8 oz pouch | 3 cups | A warm dip with chips |
| Dinner for 4 | One 8 oz pouch | 3 cups | Chicken mole with rice |
| A spoon per person, 50 people | One 16 oz pouch | 6 cups | Two moles side by side |
Making the sauce in five minutes
Warm the broth until it steams, whisk in the mole for about a minute, then simmer 2 to 3 minutes until glossy. For a classroom, make it at home in the morning, carry it in a thermos or a slow cooker, and whisk in a splash of warm broth before serving, since it thickens as it sits. The full method, and what to do if it gets too thick, is in How to make mole from dehydrated mole.
A few facts for the board
- Mole comes from the Nahuatl word mōlli, which just means sauce.
- Oaxaca is called the land of the seven moles: negro, rojo, coloradito, amarillo, verde, chichilo and manchamanteles.
- A scratch made mole negro can have 30 ingredients and takes a full day. Ours has 15 and is made by our family in Oaxaca, then sun dried.
- Mole negro has chocolate in it, but it does not taste like chocolate. That is the sentence that starts every tasting.
This year Mole Day falls on a Friday, which is a good day for it. If you are planning ahead, the 5-Flavor Bundle covers a tasting of five moles in one box.
Questions we hear a lot
- When is Mole Day?
- October 23 every year, from 6:02 a.m. to 6:02 p.m., for Avogadro's number, 6.02 × 10²³. In 2026 it falls on a Friday.
- What food do you eat on Mole Day?
- Anything with mole in the name. Guacamole is the usual choice. Oaxacan mole, the chile sauce, is the one that makes the day memorable: serve it over chicken, on tostadas or as a warm dip.
- Is the Mexican sauce mole related to the chemistry mole?
- No. The chemistry mole is a counting unit from the German word for molecule. The sauce comes from the Nahuatl word mōlli, meaning sauce. The spelling is a coincidence.
- How much mole do I need for a class of 30?
- For a tasting or a tostada bar, one 16 oz pouch of dehydrated mole whisked into 6 cups of warm chicken broth makes about 6 cups of sauce, which is plenty for 30 small servings.
