Oaxaca, Mexico, is known for its culinary diversity and taste. Many of my Mexican fiends envy their flavorful Tasajo and fluffy Conchas after being conditioned to the American grocery store meats & pre-packaged sweets. One of my favorites, of course, Oaxaca’s mole dishes. After traveling a few times a year to visit family ( & gain a few pounds) Heres one of my moms favorites, taquitos con coloradito
Here’s what you’ll need:
- Cooking oil
- Protein (Chicken is most popular)
- Tortillas
- Chopped Onion
- Queso Fresco
- Chopped parsley
- Salt
- Coloradito mole (We use our mole check it out here)
- *Chicken broth (If you use our mole)
